Jarace™ Propionates are used as mold inhibitors and preservatives. Like benzoates, proprionates prevent microbes from producing the energy they need. However, unlike benzoates, propionates do not require an acidic environment. They are easy to incorporate into flour and can also improve odor, flavor and bread volume.
